Apple pie recipe

Filling:7 peeled green apples cubed
350g fine sugar
1 teaspoon lemon/lime juice
Half teaspoon of cinnamon
1 tablespoon butter
Half cup of water
Method: Heat up the frying pan and put in butter. Put in cinnamon, sugar, lemon juice, apples and water. Cook until water reduces. Put it aside for later.
Pastry: 360g cake flour
200g butter
Half teaspoon salt
Half cup ice water
Method: Put cake flour and salt in a big bowl and then cut butter into small pieces and put the butter in the bowl. Use rub in method until all butter is rubbed into the cake flour. Pour ice water into the mixture and mix until it becomes a smooth dough. Let it rest for 15 minutes.
Roll the dough and cut it into the shape according to the tray used.(eg. circle, square or rectangle) Then put in the tray and use fork to poke some holes on the base of the pastry to prevent it from expanding. Then bake it in the oven of 180 degree C for 10 minutes. Pour in the filling and brush the edge pastry with egg yolk and bake for another 20 minutes.
